So, I have not been feeling the best in the world today. Those lovely female hormones that like to visit each month have wreaked havoc on my emotions. Not to mention my appetite.
My body is telling me that I could currently survive on peanut butter, chocolate, and coffee. Contrary to what my chocolate, peanut butter, coffee loathing hubby thinks, I say in a perfect world, we should all be able to thrive on those foods. . ;)
But, we can enjoy those delectable treats every now and then. And I found one way to do so today, without completely destroying my healthy eating habits. Here's a recipe for "Flourless Peanut Butter Cookies".
1 cup natural peanut butter
1/3 cup raw cane sugar
1 egg
1 tsp. baking soda
1/2 cup mini chocolate chips
Combine all ingredients in a medium bowl. Beat with mixer for 3-4 minutes. Spoon onto cookie sheet, 2 inches apart. Bake 8-10 minutes, at 350 degrees. Let cool for 5-10 minutes, before transferring to cooling rack.
Refrain from gorging on them right before dinner. :P

ReplyDeleteTwo weeks ago I made an "oath" to myself to leave off eating/cooking with white sugar and white flour for the next two months. I'm still making some adjustments and do allow some leeway (since today is National Pancake Day and all! ;] ). So far I've enjoyed the results and am looking forward to keeping at it. After the two months, I plan to reintroduce more complex natural sugars and cook with wheat flour and better oils. So, I love the recipe ideas you share ... I'm so grateful for your sharing your thoughts!!
Also, I think I read before that you use a lot of venison. If you wouldn't care, I would love to know some of your favorite recipes for deer burger and steak. For Christmas, my daddy gave us deer meat he had harvested ... and sometimes I don't know what to do with it!! :D
And lastly, I can't remember if I wrote this already but thank you for your help regarding comments. I figured it out with the help you sent my way! :)

ReplyDeleteI made a goal to go wheatless for one month last year (and use only whole wheat for Justin), and loved how I felt after it, that I kept it most of last year. I did allow some cheat days, like when peaches, and blueberries were coming in, and cobblers were begging to be made! :D It was tough to begin with, but after a while, I did not miss it so much. :D
And yes, I do cook venison a lot. I don't mind sharing recipes. I've never used ground deer meat. We've just always cut the chunks of meat off the bone, label what part of the deer it is, and divide it into pieces to be used for stir frys, grilling, stews, or just frying up with some seasoning. If you look under the label part of my side bar, and click on "Domestic Arts", there is a very yummy recipe for stir fry. It would probably work well busing ground meat, or cutting up the steak in bite size pieces. :)
