First Meal From Our Garden: Baked Yellow Squash


My husband and I planted our second garden as a married couple, this year. Just like last year, we planted it at my parents house, where there is plenty of room. We planted yellow squash, corn, string beans, cucumbers, and cantaloupe.
 
After weeks of weeding and waiting, the first of our crop have come in.
 
I picked a basket of beans yesterday, and will probably have to pick that many more tomorrow. Tonight I will be freezing yesterdays harvest.
 
We were also able to harvest several yellow squash, which we heartily devoured last night. :D
Here is one of my favorite ways to prepare le' wonderful veggie. :D


You will need...
~4 cups of half-moon cut squash
~1/2 tablespoon olive
~3/4 teaspoon garlic powder
~1/2 teaspoon salt
~1/4 teaspoon ground black pepper
~parsley
 
Directions...
Simply place squash, olive oil, garlic powder, salt, and pepper into a large bowl, and toss until well coated.
 
 
Place on a pan that has been sprayed with cooking spray (I use coconut oil), or lined with parchment paper. Sprinkle parsley flakes on.
 



Bake for 14 minutes at 400 degrees.
 



Add some freshly steamed broccoli, and herb roasted chicken, and voila! A wonderful side dish (or even a meal to it's own ;) )!
