He Can Have His Pancakes, and Eat Them!

For about a year now, I have been very conscious of what types of food I put in mine and my hubby's body. As much as possible, I try to prepare nutrition dense foods, to fuel our daily lives. But, that's not always an easy task when you are used to certain foods, that are not particularly known for their health benefits.

For example, the pancake.

A delicious breakfast treat. Or, if you are like my hubby, an anytime of the day snack.

I knew Justin really loves his pancakes, but I really wasn't fond of how they lacked in the nutrient area. So, I set out on a mission. To let my husband have his pancakes, and me watch him eat them knowing they are fueling his body with good stuff. :D
 

Here is my original pancake recipe...

2 cups flour
2 tsp. baking powder
1 tsp. salt
1/2 cup sugar
1 egg
1 cup milk
1/4 cup melted Crisco
 
Sift together dry ingredients. Beat eggs in bowl. Add milk and blend. Combine wet and dry ingredients. Heat pan and cook until done.

Here is my modified, much healthier version...

2 cups whole wheat flour
2 tsp. baking powder
1 tsp. salt
1/4 cup sugar
1 egg
1 cup milk
1/4 cup coconut oil
 
 
Sift together dry ingredients. Beat eggs in bowl. Add milk and blend. Combine wet and dry ingredients. Heat pan and cook until done.
 
 
Yummy!

  1. I am still living at home and do not earn enough to buy my own food regularly, but sometimes I try. I have modified waffles. I do not like wheat, so I ground up oats. I think I used coconut oil. And I ran out of eggs, so I used flax seeds cooked into a jello-like substance.
